Pulled Pork

Ingredients

  • 1 4-8 lb Pork Butt or Shoulder I typically do about 5 lbs in a 6qt Instapot
  • 1 Large White or Yellow Onion
  • 1 7 oz Can of Chipotles in Adobo Roughly Chopped
  • 2 12 oz Cans of Dr. Pepper Yes Really. Shut it.
  • 6 oz Ginger Ale Thats half of a can of Ginger Ale genius. Use the rest to make a drink.
  • Ancho Chili Powder Use to your taste
  • Salt and Pepper Use to your taste

Preparation

  • Start by triming most of the fat from the shoulder and cube up the meat into chunks. They should be roughly 1 lb chunks but I've never had any issues with odd size pieces.
  • Cut the Onion into chunks. I usually cut in half and then half again so there is a nice flat side which I face down in the bottom of the pot creating a sort of onion trivet.
    Place them in the bottom
  • On a sheet (Or hell, just do it in the pot, YOLO!), liberally apply salt, pepper and Ancho Chili Powder to the meat chunks. When you think you've used too much, use some more. Don't be a baby.
  • Pour your Chipotle in Adobo peppers all around the pork, Dr. Pepper and Ginger Ale into the side of the pot.
    Pro-Tip from the original author: "Pour the liquids down the side of your pot or you'll wash all the seasoning you just used right off the meat and that would be dumb now wouldn't it..."

Instapot

  • Press the Pressure Cook/Manual Button and set it for 65 minutes. Cover and lock the vent. (Duh)
  • After the cooking time has finished, let the pot sit undisturbed for 15 minutes. Then turn the steam release knob to the Venting position (or push button) to manually Quick Release the remaining pressure/steam if any.
  • Remove the meat to a large bowl. Use a slotted spoon to get the onions out and add to the meat. Use two forks or call Wolverine to shred the meat.
    Note: I usually skip adding the onions into the mix because I'm a heathen but you do you.
  • At this point you're pretty much done but you'll need to adjust the next steps to your taste. Some people like "wet" pulled pork and some like it dry. You'll probably want to spoon some of the juices from the Instapot into the bowl and mix well. You may also want to add more salt and pepper. For a sweeter taste, use a little brown sugar as well.
